Minecraft Caves and Cliffs will no longer all release on update 1.17, and instead will be split into two separate updates in 2021.
The first Minecraft Caves and Cliffs update is scheduled for release in Summer - though no specific release date has been given.

Minecraft Caves and Cliffs has dominated the minds of Minecraft players for nearly half a year.
The patch would’ve been the biggest in Minecraft’s history, but it will now be split into two parts instead.
Mojang have given a list of what features of Caves and Cliffs will arrive in the Summer update - and it’s a ton of it’s worked out to an awesome patch!

What to Expect in the First Minecraft Caves and Cliffs Update
The first Minecraft Caves and Cliffs update coming this year will include the following features, according to Mojang:
- Goats
- Axolotls
- Crystals
- Spyglass
- Geodes
- Tinted Glass
- Copper
- Lightning Rods
- Glow Squid
- Glow Ink
- Powder Snow
- Lush Cave Blocks
- Dripstone Cave Blocks
- Deepslate and other ore variants
- Glow Lichen
- Multiplayer Sleeping Rule (Java only)
While these changes were specifically outlined - other changes from Minecraft 1.17 may find their way into the Summer Caves and Cliffs patch.

What's Next?
The second Caves and Cliffs update for Minecraft is coming around the holiday season. This gives players even more time to wait for all of the important changes.
This wait can be frustrating since Minecraft Live introduced Caves and Cliffs in late 2020. Still, it's not out of the norm, as a similar timeline existed for Minecraft's Nether Update as well.
The second Caves and Cliffs update has no expected patch notes from Mojang just yet, but we can safely assume it will include the Minecraft 1.17 changes not slated for release in Summer.
